Chocolate Covered Almond Bark


Oh, just looking at this picture makes me want to eat more. Good memories these chocolate covered almonds and I have together.


So after reading the book Cure Tooth Decay, I have been working hard to reduce my grain intake even more. It’s been a long slow road for me, first step years ago was to stop binge eating where I could put back a whole bag of Doritos, to now, where I am nipping and tucking at the very last of my bad habits.

First you start with some raw organic almonds. Soak them for 24 hours. Soaking reduces the phytic acid (which pulls nutrients from your body) and makes them easier to digest. I start in the evening or late afternoon and then I rinse them in the morning and let them soak the rest of the day. I rinse them one more time before I put the almonds in the dehydrator. Use water warm water to soak them and also use a glass bowl if you have one. I like these pyrex bowls because they come with lids if I ever need one. But for soaking, I just cover the bowl with a tea towel, you want the almonds to be able to breathe but want to keep dust and bugs from falling in. You can add salt at this stage if you want.

Then I dehydrate them for about 12 hours at 115 degrees. I sprinkle them with a little sea salt at this stage, when they are all spread out evenly in the trays. If you don’t have a dehydrator, you can do this in your oven on the lowest temperature setting and the door cracked open a bit. This way is not very practical if you have small children running a muck, and it uses a lot of energy. I highly suggest investing in a dehydrator. Like I mentioned in my cultured fruit leather post, I have a cheap one and it works fine. But these are the Cadillac of dehydrators.

After I dehydrate them, I roast them for about 10 minutes. This is not necessary, but it gives them a really nice crunch and flavor.

Then the fun part! I melt some fair trade, organic, semi-sweet chocolate chips, double boiler style. Once the chocolate is melted, I just dump the almonds in the bowl with the melted chocolate and mix up good, so all the almonds are covered.

Then I spread the mixture on a cookie sheet that is lined with freezer paper, and place it in the fridge for about an hour to firm up.

And then eat some up! Preferably with a big glass of raw milk, or a glass of organic red wine, whatever you’re in the mood for!

    screw the chocolate bark…’s 4pm here so I was a little more focused on the Michelob Ultra Light Cider ad!!!

    But seriously, this looks great. Where do you buy your organic, raw almonds. I’ve only been able to find a websites and the almonds are all sourced from Italy.

      I get at a local co-op or from a friend who orders them online in a huge bulk order. She gets several people to buy at once, to keep the costs as low as possible.

        That must be so nice to have friends who live and eat like you. (at least I get the sense that you do through reading your posts).

        I am in a bubble all by myself. My closest friends are doctors or RN’s and have already been brainwashed in school. My other friends just don’t get it. And my neighbor’s laugh at me. If I ever asked if someone wanted to go in on almonds, my friends would be like huh?

        I have been keeping bacon grease from pasture pigs next to my stove and used it today for the first time for my pasture eggs. Holy awesomeness flavor. And I just took Green Pastures CLO for the first time this week. Thanks for opening my eyes to a whole new world. It totally fits with me and I have a good feeling about all I am doing.

        I was just wondering how you get your daughter to take CLO. Short of holding down my kids and force feeding it to them I am lost. I casually tried slipping it in their chocolate coconut milk and even tried it in juice (which I never give my kids straight). I’ve been taking mine with maple syrup. But they won’t touch it on the spoon. I got them the kids peppermint flavor. I feel like giving up on it

          I do have a few good friends that eat the way I do, but the majority of my people in town do not. That is why I love this little online community I have created. It is so important to have support. As for FCLO I take capsules and I put my daughters in her smoothie. I also will run it on her butt at a diaper change if she doesn’t have a smoothie that day for some reason. Absorbs into the blood stream from the skin! So glad you like my blog and that you are here!!
