Baked Sweet and Sour Chicken

Made this tonight – still as delicious as the first time I made it 5 years ago. We drizzled a healthy amount of Siracha when it came out of the oven. Served over cauliflower rice and steamed broccoli. 

Made this for the first time last night and it was amazing!! Everyone loves it!! That never happens!! 

It was perfect! Not too sweet, not too acidic.

Ingredients :

1lb chicken thigh, diced into 1-inch cubes

2 eggs, lightly beaten

1 cup cornflour

½ cup vegetable oil

1 clove garlic, finely chopped

2 red bell pepper, diced

2 green bell pepper, diced

1 cup pineapple, diced

½ cup brown sugar

¼ cup apple cider vinegar

¼ cup ketchup

½ cup pineapple juice

1 tbsp soy sauce

2 tsp cornflour

salt, to taste

3 green onions, thinly sliced

How to make Baked Sweet and Sour Chicken :

In a bowl add the eggs and season with salt, pour the cornflour into a second bowl.

Dip the cubed chicken into the bowl of egg then shake off the excess, place the chicken into the bowl of cornflour to coat.

Place a skillet on high heat and add the vegetable oil.

Fry the coated chicken in the hot oil for 3 minutes, to form a crust, then transfer to the baking dish.

Place the crispy chicken in the preheated oven and bake for 15 minutes.

Return the skillet to the stove and discard the vegetable oil. Into the skillet add the garlic, bell pepper and pineapple, saute for 3 minutes to soften slightly.

In a bowl combine the brown sugar, apple cider vinegar, ketchup, pineapple juice, soy sauce and cornflour. Whisk the ingredients together to dissolve then pour the sauce into the skillet.

Cook the sweet and sour sauce for 2 minutes to thicken.

Remove the baked chicken from the oven and add to the skillet, toss together to coat the chicken in the sweet and sour sauce.

Serve the baked sweet and sour chicken immediately, garnished with sliced greens onion and served over rice.
