Banana Bars With Cream Cheese Frosting

Fifth time making this today! This recipe is so, so good. My kids love it & so does my husband who doesn’t even like bananas. Didn’t have butter today & subbed that with light olive oil and worked perfectly too.

What an excellent way to use up over-ripe bananas besides banana bread! Made twice and turned out perfect both times. I like there is not much added sugar, and the texture is similar to a brownie – this recipe is a KEEPER!

These are SO GOOD! They don’t even taste “healthy” and they are so moist and banana-y and also make a great snack or breakfast!

I was given this recipe years ago by my friend. I’ve had it written down on a torn piece of paper for years and decided today that this recipe needs to be on AllRecipes. It is a moist, sweet, and delicious bread with a crispy crust. By far my favorite bread recipe!

This should (almost) be illegal! It’s so insanely tasty and I have to share the crazy thing I did while making it. The chocolate frosting hardens like a ganache, so it’s still soft when you cut into it but the top should be firm.

Ingredients :

3 banana, over-ripe

¾ cup brown sugar

⅓ cup unsalted butter, room temperature

¼ cup sour cream

1 egg

1 tsp vanilla extract

1 cup plain flour

1 tsp baking soda

1 tsp ground cinnamon

Cream Cheese Icing

¼ cup unsalted butter, softened

4oz cream cheese, softened

1 tsp vanilla extract

2 cups icing sugar

How to make Banana Bars With Cream Cheese Frosting :

Preheat an oven to 350F and lightly grease a baking dish.

Into a mixing bowl add the dark brown sugar, softened butter and sour cream, whisk together to create a light and fluffy consistency.

Then add the egg to the mixing bowl, stir together to combine the ingredients.

Sieve the flour, baking soda and cinnamon powder into the mixing bowl.

Mash the bananas with a fork until roughly crushed and pour into the mixing bowl along with the vanilla extract. Fold the ingredients together to form a uniform consistency, the dough will be wet.

Transfer the banana batter to the baking dish and smooth down.

Bake the banana bars in the preheated oven for 45 minutes.

Remove the banana bars from the oven and check with a cake tester, if it comes out clean when inserted into the middle then it is ready. Allow the banana bread to cool completely.

For the cream cheese frosting, place the softened butter and cream cheese in a mixing bowl, whisk until thick and creamy. Then fold in the vanilla extract and icing sugar until completely combined.

Spread the cream cheese frosting over the cooled banana bars and slice to serve.
