Bread pudding with vanilla sauce is a classic favorite. It’s simple to throw together and bake in the oven and tastes so delicious.
Prep Time: 15 minutes | Cook Time: 50 minutes | Servings: 2
Ingredients:
2 cups plus 2 tablespoons all-purpose flour
8 ounces softened cream cheese
2 cups fresh or frozen blueberries
1½ cups white sugar
1½ teaspoons baking powder
2 sticks softened unsalted butter
1 teaspoon vanilla extract
4 eggs
½ teaspoon salt
How to make Blueberry Cream Cheese Loaf:
Preheat the oven to 350 degrees F.
Grease a pair of 5 x 9-inch loaf pans.
Toss the blueberries in 2 tablespoons of the flour.

Beat the cream cheese with the butter, sugar and vanilla until smooth, using an electric mixer.
Add the eggs, one at a time, mixing well after adding each one.
Stir 2 cups of flour with the baking powder and salt.
Mix this into the wet ingredients until well combined.
Fold in the blueberries gently.
Pour the batter into the loaf pans.
Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
Let the loaves cool in the pans for 10 minutes.
Run a knife around the edges and tip the loaves out.
Let them cool completely on a wire rack.
