Blueberry Cream Cheese Loaf

This loaf was out of this world! It was the quickest, easiest breakfast bread I’ve ever made..

Bread pudding with vanilla sauce is a classic favorite. It’s simple to throw together and bake in the oven and tastes so delicious.

I don’t know anyone who does it adore a heaping slice of bread pudding. It’s packed with all your favorite traditional flavors like the vanilla, cinnamon, nut meg, butter, and sugar. Once you taste this simple oven baked bread pudding you will never want another  dessert recipe again. 

Excellent! I used raisins and walnuts and a little more than what was called for. I made individual monkey breads using my large muffin tin and gave them to my bowling league members for Christmas. I shared the recipe with all since they loved them as much as I do!

I have made these lemon brownies 3 times now and I absolutely love them! They are so moist and delicious. This recipe is definitely a keeper. It’s so easy and quick to make and it tastes delicious! 

Prep Time: 15 minutes Cook Time: 50 minutes | Servings: 2

Ingredients:

 

2 cups plus 2 tablespoons all-purpose flour

8 ounces softened cream cheese

2 cups fresh or frozen blueberries

1½ cups white sugar

1½ teaspoons baking powder

2 sticks softened unsalted butter

1 teaspoon vanilla extract

4 eggs

½ teaspoon salt

How to make Blueberry Cream Cheese Loaf:

Preheat the oven to 350 degrees F.

Grease a pair of 5 x 9-inch loaf pans.

Toss the blueberries in 2 tablespoons of the flour.

Beat the cream cheese with the butter, sugar and vanilla until smooth, using an electric mixer.

Add the eggs, one at a time, mixing well after adding each one.

Stir 2 cups of flour with the baking powder and salt.

Mix this into the wet ingredients until well combined.

Fold in the blueberries gently.

Pour the batter into the loaf pans.

Bake for 50 minutes or until a toothpick inserted into the center comes out clean.

Let the loaves cool in the pans for 10 minutes.

Run a knife around the edges and tip the loaves out.

Let them cool completely on a wire rack.
