The tortillas are browned in a pan on the stove. Take care not to overcook them. You are going for a very light golden color. They still need to be flexible so you can fold them around the filling. 2 cups shredded rotisserie chicken, or leftover cooked chicken
1 bunch green onions, thinly sliced
8 ounces cream cheese
1 cup shredded cheddar cheese
10 medium corn tortillas
2 minced garlic cloves
½ teaspoon salt
¼ teaspoon black pepper
Canola or vegetable oil, for frying
How to make Chicken Cream Cheese Tacos:
Preheat the oven to 425 degrees F.
Heat a tablespoon of oil in a skillet.
Fry the tortillas one at a time until light golden.
You can add more oil as needed.
Let them drain on paper towels or a wire rack.
Fold them over to dry so they set into U-shaped taco shells.
Put the cream cheese in a pan over a low heat and stir until melted.
Add the chicken, green onion, garlic and cheddar.
Take the pan off the heat and stir well.
Divide the chicken mixture between the taco shells.
Arrange the filled taco shells in a 13 x 9-inch baking dish.
Bake for 8 minutes or until the shells are browning.
Serve 2 tacos to each person, perhaps paired with some Mexican rice and guacamole.
