Chicken Cream Cheese Tacos 

There are literally hundreds, maybe even thousands, of easy taco recipes. However, these cream cheese chicken tacos are one of the most delicious. Chicken, green onion and garlic pair with cream cheese and shredded cheese to make these. The filling is sandwiched in corn tortillas to make this wonderful snack or meal. Some people prefer to use flour tortillas, although honestly any kind will work for this recipe.

The tortillas are browned in a pan on the stove. Take care not to overcook them. You are going for a very light golden color. They still need to be flexible so you can fold them around the filling. The ingredients for the filling are combined with a touch of salt and black pepper. After that, you can sandwich the filling in the tortillas and then bake them for about ten minutes.

Garnish Options for Cream Cheese Chicken Tacos : 

Some lettuce and tomato could go on top of these chicken tacos before serving them. Some people might like to add some sliced chilies or even a squeeze of lime juice to the finished tacos.

Ingredients:

2 cups shredded rotisserie chicken, or leftover cooked chicken

1 bunch green onions, thinly sliced

8 ounces cream cheese

1 cup shredded cheddar cheese

10 medium corn tortillas

2 minced garlic cloves

½ teaspoon salt

¼ teaspoon black pepper

Canola or vegetable oil, for frying

How to make Chicken Cream Cheese Tacos:

Preheat the oven to 425 degrees F.

Heat a tablespoon of oil in a skillet.

Fry the tortillas one at a time until light golden.

You can add more oil as needed.

Let them drain on paper towels or a wire rack.

Fold them over to dry so they set into U-shaped taco shells.

Put the cream cheese in a pan over a low heat and stir until melted.

Add the chicken, green onion, garlic and cheddar.

Take the pan off the heat and stir well.

Divide the chicken mixture between the taco shells.

Arrange the filled taco shells in a 13 x 9-inch baking dish.

Bake for 8 minutes or until the shells are browning.

Serve 2 tacos to each person, perhaps paired with some Mexican rice and guacamole.
