Taco Stuffed Tomatoes

I make this Taco Stuffed Tomatoes dish often—my family really likes it. Besides being flavorful, the tomatoes make a colorful, zesty addition to any dinner. 

I amped up the flavor using parmesan panco crumbs and infused basil olive oil. I also rubbed the same oil on the outside of the tomato. I cooked on the smoker at 300 for 30 minutes and topped with mozzarella. My husband and I were extremely happy with the result.

It was SO good! It’s a great recipe to use for the abundance of tomatoes we have this time of year; however, I wish there had been an extra element or ingredient to really make this a WOW side.

Refreshing, delicious and available to be consumed without moderation, the tomato is a fruit vegetable that plays a balancing role in the diet and is full of nutritional assets such as vitamin E, vitamin C, beta-carotene and lycopene, compounds that all have a strong antioxidant power.

Tomatoes are not only healthy and rainy, but also very tasty. Many dishes can be prepared from them: they are used for salads, they are cooked, baked, salted, pickled, they serve for excellent juices and sauces. In addition, they can be used as an edible plate of the Taco Stuffed Tomatoes, which are a great option for a festive meal, a hearty lunch or dinner, as the aromatic and slightly spicy hot minced meat goes so well with the fresh and juicy tomatoes, crispy lettuce and cheddar cheese.

The zest of this simple dish is in a special garnish: the ground beef is topped with lettuce, onions, cheese and taco seasoning for added flavor. It turns out very appetizing, aromatic and tasty! In addition, what is particularly pleasant is that it does not require any accompaniment, it is completely self-sufficient and satisfying, which is brilliantly perfect.

First, use a sharp knife and carefully cut an “x” into the top of each tomato, slice off enough of the flesh so that it can be gently peeled, being careful not to cut it completely. Then carefully spread the open corners, leave these tomatoes in one side and take your fresh onions, and chop them finely then cut the lettuce leaves into thin strips; grate the cheese on a coarse grater. In a large skillet over medium heat, heat the olive oil in a large skillet, Add the chopped onions, salt lightly and sauté until tender, about 5 minutes. Place the ground beef and the seasoning taco in a pan with the onion and brown everything, stirring constantly with the onions and seasonings. Break large pieces of minced meat into small pieces with a spatula. The ground meat should turn brown, but not completely dry. Finally, spread the taco meat over the tomatoes, and then top each with cheese, lettuce and sour cream before serving.

Do not be surprised to see your dish devoured within minutes!

Tips:

  • You can make it, with any kind of meat
  • Try scallions, avocado or guacamole, shredded cheese, sour cream, Fritos, or crumbled tortilla chips as toppings.
  • The filling can be made ahead of time and rewarmed in a skillet or microwave.
  • Stuff the tomatoes right before you plan to eat.

How to make Taco Stuffed Tomatoes :

Preheat the oven to 375 degrees F.

Fry the onions with the beef in a skillet over a moderate to high heat until the beef is browned and the onions are tender.

Drain any excess grease.

Stir in the corn, taco seasoning and spinach.

Slice the tops off the tomatoes and remove the pulp from the middle with a spoon.

Sprinkle cheese on top and bake for 15 minutes.
